This is a great recipe to use up some leftover turkey. It comes from Jim West.

Buffalo Turkey Wraps

3 cups diced turkey

6 8” flour tortillas

6 romaine lettuce leaves

1 red bell pepper, sliced

2 green onions, chopped

Buffalo Sauce

3/4 cup hot pepper sauce

2 TBL vinegar

1 tsp. Worcestershire sauce

1 tps. garlic powder

2 tsp. honey

1/4 cup butter

In a saucepan over medium heat, stir together all sauce ingredients except butter until just simmering. Remove and stir in butter chunks until melted. Salt and pepper to taste.

Toss turkey chunks with 3/4 cup of sauce. Place 1/2 cup of turkey in each tortilla and add lettuce, pepper slices and onions. Roll closed and wrap in parchment paper.

Serve hot with remaining sauce and ranch dressing as dips.
