The August Heart of Oklahoma Chamber of Commerce luncheon will be held Thursday, August 31, at 12 p.m. at the Mid-America Technology Center, 27438 State Highway 59, in Wayne.

The luncheon will feature superintendents Dr. Toby Ringwald, Wayne; Dr. Sheli McAdoo, Purcell; Chad Hall, Lexington; and Chris Reynolds, Washington, and Mike Eubank, Mid-America Technology Center.

The superintendents will be speaking on the “State of the Schools.”

The host for the luncheon is McClain Bank.

The Purcell Public Library will present “Spark a Change: Let’s Talk about Resiliency” Saturday, September 9, from 10-11:30 a.m.

The program is for adults 18+ and will be held at the McClain County Expo Center, 1715 Hardcastle Blvd., in Purcell.

Join author Elizabeth Letts to explore the theme of resiliency in her book The Ride of her Life: The True Story of a Woman, Her Horse, and Their Last-Chance Journey Across America.

Learn more about resiliency in yourself and your community through a conversation with author Elizabeth Letts. Learn about the resiliency shown through this true story of Annie, her horse, Tarzan, and her dog as she rode across America to fulfill her dying wish of seeing the Pacific Ocean.

Here’s another great idea for your tailgating Saturday.

Bacon Cheeseburger Crockpot Dip

1 lb. of ground beef

8 oz. packet of cream cheese, cubed.

2 cups shredded cheddar cheese

10 oz. can of diced or chopped tomatoes with green chiles.

6 oz. package of real bacon bits, divided

1 tbsp dried parsley.

Assorted chips

Begin to brown the ground beef. Remove excess liquid and place into a large skillet.

Over low heat, stir in the cheeses, tomatoes along with all their juices. Add bacon bits except for 2 tablespoons (set these aside for garnishing at the end). Mix together well within the skillet until all ingredients are heated well.

Pour the heated mixture into a 2-quart crockpot. Cover and cook on low for 2-3 hours stirring occasionally.

Stir in parsley 1-3 minutes before serving.

Serve & garnish with remaining bacon bits.
