The City of Purcell is hosting a shredding and Rx Take Back event Saturday, April 27, from 9 a.m.-12 noon at the Purcell Police Department.

Cars should enter the police department parking lot from Grant Street and follow the signs.

All documents must be free of binder clips, must be in cardboard boxes and be limited to five boxes per car.

Items not accepted include needles, syringes, liquids, chemicals and inhalers.

This is a combination of several different chicken spaghetti recipes. I like to make it in the crockpot because it keeps it warm and I think it’s easier.

Rotel Chicken Spaghetti

2-3 boneless, skinless chicken breasts, chopped into bite sized pieces

1 can Rotel Tomatoes with Diced Green Chiles, undrained

1 green bell pepper, diced

1 small white onion, diced

16 oz. Velveeta Cheese Loaf, cut into 1 inch cubes

1 lb. package thin spaghetti noodles

Cook chicken in 2 tablespoons olive oil or butter until almost done. Add bell pepper and onion to the chicken and saute until chicken is cooked and vegetables are soft.

Meanwhile, cook spaghetti noodles according to package directions.

Combine chicken, pepper and onions with the cooked spaghetti noodles while they are still hot. Add cubes of Velveeta cheese to the mix and stir until everything is combined and the Velveeta cheese is completely melted.
