This is an easy recipe for a delicious veggie dip and you can get your New Year’s Day peas at the same time.

Texas Caviar

2 cans (15oz.) black eye peas, drained well

1 can (15 oz.) white corn, drained

1 cup chopped red bell pepper

1/2 cup chopped parsley

1/4 Cup chopped red onion

1 can of chopped tomatoes with chilies (Rotel)

1 tsp. chopped fresh garlic

Salt & Pepper to taste

1 cup Italian dressing

Combine all ingredients except the peas in a medium-sized serving bowl, and stir to blend well.

Now add the peas and stir to blend them throughout the salsa.

Cover and refrigerate for at least 2 hours or overnight for flavors to marinate.

Serve with your favorite dipping chips, like scoops or tortilla chips.
