Here is the recipe for one of the best relishes around! It comes from Tiny Wilson.

Hot Scotch Relish

3 qts. ripe tomatoes, chopped

4 onions

1 sweet pepper

3 or 4 hot peppers

1 or 2 tsp. red cayenne pepper

1 cup sugar

3/4 cup vinegar

1-1/2 TBL salt

Chop onions and peppers. Mix with chopped tomatoes. Add red pepper if you like it hotter. Combine remaining ingredients and mix into tomatoes mixture.

Cook until thick, or until amount of ingredients is reduced to half the original amount.

Seal in jars and process in water bath for 5-10 minutes.

Tiny noted on her recipe: “I add 1/2 to 1 tsp. cumin and about 1 tsp. of chopped cilantro to my mix.”
