Looks like we’re in for six more weeks of winter after the Ground Hog saw his shadow on February 2.

Join the Purcell Public Library in creating positive change in our community by recycling styrofoam.

Bring your styrofoam to the library to be recycled Saturday, February 8, from 10 a.m. to 12 p.m.

Library staff will be working with Churches Caring for Creation whose mission is to “save the planet ‘one drink cup at a time’” by recycling #6 plastic.

The Purcell Public Library will present the “Learn it! U.S. Citizenship Test Study Sessions” Tuesday, February 11, from 5:30-6:30 p.m. in the meeting room of the library.

In these sessions you will prepare for the U.S. Citizenship test.

Strengthen your study skills! This program is a series of study sessions to help you prepare for the U.S. Citizenship test.

This activity is supported by a grant from the Institute of Museum and Library Services (IMLS) and the Oklahoma Department of Libraries.

The program is designed for adults and registration is required.

The Knights of Columbus of Our Lady of Victory Catholic Church will hold a Valentine’s Dinner Friday, February 14.

The event will be held in the parish hall at Fourth and Jefferson in Purcell.

Doors open at 6 p.m. and dinner will be held from 7-10 p.m.

Tickets for the adults only dinner are $80 per couple or $40 for singles.

The meal will include steak, baked potato, salad and dessert.

With six more weeks of winter predicted we’re going to need some more recipes to warm us up! Try this one.

Rotel Chicken Spaghetti

2-3 boneless, skinless chicken breasts, chopped into bite sized pieces

1 can Rotel Tomatoes with Diced Green Chiles, undrained

1 green bell pepper, diced

1 small white onion, diced

16 oz. Velveeta Cheese Loaf, cut into 1 inch cubes

1 lb. package thin spaghetti noodles

Cook chicken in 2 tablespoons olive oil or butter until almost done. Add bell pepper and onion to the chicken and saute until chicken is cooked and vegetables are soft.

Meanwhile, cook spaghetti noodles according to package directions.

Combine chicken, pepper and onions with the cooked spaghetti noodles while they are still hot. Add cubes of Velveeta cheese to the mix and stir until everything is combined and the       Velveeta cheese is completely melted.

Note: I like to combine my ingredients in a slow cooker so the cheese melts evenly and it all stays warm.
