Out of an abundance of caution and in the interest of protecting staff and customers from the spread of the novel coronavirus strain “COVID-19,” the Pioneer Library System, which includes the Purcell Public Library, is canceling all programs, events, meeting room bookings and outreach activities through the end of March.
At this time, all libraries will remain open to the public for their regular hours.
The Purcell Public School Foundation open meeting for the public, which was to be held Thursday, March 26, has been postponed.
The meeting will now be held Thursday, April 23, at 12 noon in the Purcell Administration Building.
We all need some comfort food right now. Try this!
1 tablespoon olive oil
1 pound ground beef
1.25-ounce package taco seasoning
10-ounce can Rotel® mild diced tomatoes & green chilies
1 tablespoon tomato paste
8 ounces spaghetti
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 roma tomato, diced
2 tablespoons chopped fresh cilantro leaves
Heat olive oil in a large stockpot or dutch oven over medium high heat.
Add ground beef and cook until beef has browned, about three to five minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
Stir in Rotel®, tomato paste, spaghetti and 3 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
Remove from heat and top with cheeses. Cover until melted, about 2 minutes.
